African Beans Over Basmati Rice

Everyone loves beans and rice.  Try this fragrant and hearty version, perfect on a cold night with a blanket and cup of tea.

Instructions

  1. Cook basmati rice according to package instructions.
  2. In a pot, sauté garlic and onions in oil.

  3. Add 2 teaspoons curry powder and stir.
  4. Add tomatoes with juice and simmer for about ten minutes. 

  5. Add the coconut milk and simmer for ten minutes. Taste the mixture and add another teaspoon of curry if you like.
  6. Add drained beans. 

  7. Cover and simmer for 15-20 minutes, adding salt to taste.
  8. Serve over basmati rice.

Beans ready in: about 40 minutes. 

Serves: 4-6 people.

    Is curry powder not unhealthful due to it being irritant?

    In most curry powders, turmeric is a main ingredients. Research finds turmeric to be anti-cancer, anti-inflammatory and good for brain health. Check the label for other ingredients. Most include coriander, fenugreek, fennel, garlic, ginger, and etc. All of the above help to protect against disease.

    I made this recipe and usedd fresh tomatoes instead of canned and it was very delicious.  I will rotate this recipe into my staples.

    Cans of coconut milk are all around 13.5 ounces.

    try using it with red rice.  I got my red rice from amazon dot com.  really nice tasting.
