Almond Red Pepper Spread

Instructions

  1. In a food processor, pulse almonds, cumin and salt until almonds are finely ground.
  2. Add peppers, garlic and lemon juice. Whirl until smooth.
  3. Taste for seasoning. May add agave syrup to taste and a little red pepper liquid if a softer spread is desired.
  4. Whirl again to mix well.

Makes about 2 cups.

    Would fresh red peppers work also ?

    Fresh peppers would be OK if they have been steamed until they are soft. (Uncooked peppers do not blend easily.) Roasted peppers add a distinctive flavor which would be missing.

    Store spreads refrigerated in a covered container. It should easily keep 5 or 6 days.
