Instructions

  1. Stir the frozen pineapple juice after thawing and before measuring.
  2. Combine the coconut milk, frozen pineapple juice, the tapioca and honey.
  3. Bring to a full boil in a saucepan over medium heat, stirring constantly.
  4. Let this mixture cool.
  5. Add the coconut, vanilla, pineapple, grapes and mandarin oranges.
  6. Mix well and refrigerate.
  7. Serve chilled with soy whipped topping or coconut cream topping.
  8. Top it off with a cherry.
