Antipasto Picnic Salad

Instructions

  1. Cut all vegetables into bite-size cubes and place in a large bowl. Gently mix everything together.
  2. Toss diced avocado in lemon juice and pour over top of salad.

Variation: arrange in separate portions on a platter.

    Have you ever tried it with edamame (fresh green soybeans) to replace the tofu? I prefer using whole foods, when possible. Edamame are easy to find in the frozen vegetables section of most grocery stores.

    Edamame would be a perfect alternative for the tofu cubes. I might even prefer it.
