Instructions

A popular entree at vegetarian potlucks, this all-plant based recipe is a delicious alternative which doesn’t require canned mushroom soup. Using frozen potatoes eliminates most of the preparation time.

  1. Steam onion in a little water until soft.
  2. In a large casserole, stir together the cooked onion, sauerkraut, and potatoes mixing well.
  3. Add Mushroom Gravy and stir to mix. Sprinkle paprika over top.
  4. Bake 375° F for 45 minutes.

Serves 12

    Thank you, NEWSTART for this great recipe for Bavarian Potatoes.  I found Newstart through Dr. Galen Comstock who conducted a â??Reversing Diabetes & Obesityâ? seminar at our church.  On Dec. 17, after trying this recipe, I took this dish to fellowship dinner at church.  Thank you for a really GREAT recipe.  It was a huge success.  Several people wanted more and asked for the recipe. 
      The â??mushroom gravyâ? in this dish is worth its weight in gold.  vegetarian cooks have relied for years on Campbellâ??s Condensed Mushroom Soup.  However, for those (like me) who are allergic to cowâ??s milk it has been a problem all along.  I canâ??t believe how much this gravy resembles/looks like/tastes like the Campbellâ??s Soup.  This is worth itâ??s weight in gold!
    I look forward to trying more recipes from Newstart.  And thanks again to Dr. Comstock and Newstart for helping us REALLY enjoy a healthy plant-based diet.

    My friend and I suggest a new twist to this recipe:  try a little sauerkraut juice in the gravy to give it a sour cream flavor.  Also works with either cashews or almonds, although the almonds either need to be soaked first or one needs a heavy duty blender to get them smooth without being gritty.

    Would you give us permission to put some recipes from Newstart on our church website?  We have begun a new vegan site featuring vegan recipes and resources…and church members test the recipes before publication.  This is such a fantastic recipe I’d like to place it on our website if that is okay with Newstart?

    It would help if the food values could be listed; such as, the carbohydrates, proteins, etc.  Some people due to health concerns need to track these numbers.

    I’m going to take this to the next potluck at church.  It’s a great way to use up some sauerkraut a friend gave me.  I would also like to try making it with sunflower seeds instead of cashew nuts.

    Mushroom Gravy should be fine with sunflower seeds rather than cashews. I would add an extra tablespoon of cornstarch as cashews thicken more readily than sunflower seeds.

    Sauerkraut is a soured cabbage.  Is there any problem with using it?

    I believe fermented foods have more positive nutritional value than any “problem.” However I am not a doctor or dietician, so you might want to research this further.
