Belizean Beans and Rice

Instructions

The cuisine of Belize features the prominent use of coconut milk. Beans and rice is a popular everyday dish in this Central American Country.

  1. Combine all ingredients, except cilantro, in a large saucepan and bring to a boil over a medium flame.
  2. Cover and reduce heat to the lowest setting and simmer 20-30 minutes until rice is soft.
  3. Add cilantro and fluff with a fork just before serving.

Serves 8

    Re: Belizean Beans and Rice: Can I substitute already-cooked brown rice? Quick-cooking of grains, we don’t do, but maybe rewarming already well-cooked brown rice….

    The liquid in the recipe is designed for cooking and flavoring the quick rice, so you will need to try less liquid, perhaps rinsing and draining the beans and adding a little less coconut milk. I would cook all the other ingredients together until the vegetables are tender and add the rice just before serving. Let me know if this works.
