Better Than “Kraft” Macaroni

Instructions

  1. Cook macaroni till noodles are done.
  2. Blend all ingredients together except coconut milk.
  3. Turn blender on high and drip coconut milk in until the sauce is thick. Mix with macaroni.
  4. Can bake if you like on 350 or eat as is.

    Soy Supreme may be another name for Sour Supreme, a soy based sour cream substitute made by Tofutti.

    By the way, don’t blend the macaroni in step 2 :)

    Tofutti’s sour cream has free glutamic acid in the form of something like Guar Gum or Xanthan gum, or maybe it’s Carageenan.  I can’t remember which.  Free glutamic acid is tantamount to MSG.  Yeast flakes also contain free glutamic acid.

    For recipes that call for sour cream, you may choose to make your own (with tofu, lemon juice…) if you prefer not to use the commercially prepared substitutes.

    do I add just the soy supreme powder or should I mix it into a milk before adding to the recipe?

    I simply pour a can of full fat coconut milk into a saucepan, and shake in brewer’s yeast, and bragg’s liquid aminos-2 tblsp.; and dashes of itallian herb blend; dried dill weed, celery salt, ground dried thyme powder, oregano powder, cumin, turmeric, garlic powder, onion powder, dried parsley, and a touch of ground dried red pepper( cayenne), and iodized sea salt to taste. Mix together w/ a whisk. Dip a spoon in to taste the ‘umami’ flavor before heat on med-hi to briefly warm while stirring. Once heated, taste again to make sure flavor is balanced. You should first cook whole grain noodles-1 lb. pkg. in sea salted water- few dashes for a large pot of boiling water; and add 1 tblsp. oil. By cooking pasta in salted water, adds flavor to the pasta, so you use less salt in the mock cheese sauce. When pasta noodles are cooked to al dente-or tender firm, drain in colander, and add noodles to the pot w/ the warm coconut milk ‘cheese’ sauce. Stir to coat evenly. Can either eat now, or put in a 350 degree oven til golden brown on top- but not dried out.
