A tasty fried 'rice' using cauliflower as a rice substitute. It's chock full of vitamins and nutrients and it tastes great!
- Chop cauliflower and process in a food processor until it resembles rice. Set aside.
Lightly steam the broccoli and set it aside.
- Lightly oil a large skillet on medium-high heat.
Sauté onions until translucent, then add the bell pepper, garlic and ginger. Sauté for another minute.
- Add your carrots and stir for another 2-3 minutes.
Stir in the cauliflower, cover the skillet, and cook for 10 minutes.
- Add the broccoli, green peas, soy sauce (or alternative), and sesame oil and stir everything together.
Cover the skillet, remove it from heat, and serve.
Ready in about: 30 minutes
