Cauliflower Fried Rice

A tasty fried 'rice' using cauliflower as a rice substitute. It's chock full of vitamins and nutrients and it tastes great!

Instructions

  1. Chop cauliflower and process in a food processor until it resembles rice. Set aside.
  2. Lightly steam the broccoli and set it aside.

  3. Lightly oil a large skillet on medium-high heat.
  4. Sauté onions until translucent, then add the bell pepper, garlic and ginger. Sauté for another minute.

  5. Add your carrots and stir for another 2-3 minutes.
  6. Stir in the cauliflower, cover the skillet, and cook for 10 minutes.

  7. Add the broccoli, green peas, soy sauce (or alternative), and sesame oil and stir everything together.
  8. Cover the skillet, remove it from heat, and serve.

Ready in about: 30 minutes

Makes: 3-4 servings
