Coconut Oat Bars

This is a snack made interesting with things like dates and coconut.  Feel free to toss in nuts, fruits, and other things of your choosing because this is a 50-bar recipe and you should create something that you'll enjoy the 49th time around.

Instructions

  1. Place coconut, Brazil nuts, and flour in a food processor and blend for one minute.
  2. Put in a mixing bowl and add oats and salt.

  3. Blend dates, honey, and water until smooth and add to the nut and flour mixture with salt and vanilla.  Stir together and then mix with hands, adding a little more water as needed to make a dough that is moist but not sticky.
  4. Use nonstick or lined 12" x 17" sheet pan and cover with plastic wrap.

  5. Spread the mixture onto the plastic-wrapped sheet pan and roll flat with a rolling pin--to about 1/4 inch thick.
  6. Score into rectangles with a knife before baking.

  7. Bake at 350°F for 20-25 minutes.


Ready in about: 35 minutes

Makes: about 50 bars

    Do you use plastic wrap as written or parchment paper?

    Yikes! More explanation here please! It sounds like you put the plastic wrapped pan into the oven for baking!
