This is a snack made interesting with things like dates and coconut. Feel free to toss in nuts, fruits, and other things of your choosing because this is a 50-bar recipe and you should create something that you'll enjoy the 49th time around.
- Place coconut, Brazil nuts, and flour in a food processor and blend for one minute.
Put in a mixing bowl and add oats and salt.
- Blend dates, honey, and water until smooth and add to the nut and flour mixture with salt and vanilla. Stir together and then mix with hands, adding a little more water as needed to make a dough that is moist but not sticky.
Use nonstick or lined 12" x 17" sheet pan and cover with plastic wrap.
- Spread the mixture onto the plastic-wrapped sheet pan and roll flat with a rolling pin--to about 1/4 inch thick.
Score into rectangles with a knife before baking.
- Bake at 350°F for 20-25 minutes.
Ready in about: 35 minutes
