Instructions

  1. Simmer potatoes, celery, and onion in water until almost done. Add garlic, salt and corn.
  2. Continue simmering until vegetables are soft. Add milk. Heat thoroughly but do not boil.
  3. In a blender, process 3 cups of soup until creamy.
  4. Add back to the rest of the soup. Add dill and celery seed to taste. Serve warm.

    I just received this recipe today on FB and it sounded good.  I made it for supper and my husband and I both thought it was very good.  The only addition I made was I added 2 Tbs. of vegetarian McKay’s Chicken Seasoning to the liquid.  I didn’t have celery seed so I used celery salt.  I will definitely make it again.  Debbie

    Hmmm..very disappointed in this recipe.  I could tell from the start that it would be somewhat bland so I “sauteed” the onion, garlic and celery, hoping to impart a little more flavor dimension.  I added 3 tsps of Bills’ Best Chik’Nish Vegetarian Seasoning and then proceeded as directed. I don’t like thyme so I left that out.  I felt it still was bland so I went crazy and added a cashew cream sauce that I really like.  Wow!  What a difference!  Thicker, richer and more flavor!  It still needed more salt though.  To the blender (see directions above) add 1/4 cup raw cashews, 1/2 lemon juiced, 1/4 red bell pepper, 1 clove garlic, 1 tsp salt, onion powder and 2 Tbls. nutritional yeast flakes.  This is great which chips or burritos or veggies, etc.  The recipe is from the website HEALTHIER STEPS.  Here is the link.  https://healthiersteps.com/recipe/southwestern-stuffed-spaghetti-squash-vegan/?fbclid=IwAR3nNYo1SDoLgV1ZfnxyKvKkGtelOA5hP7va2eiPPklhWWP1OXxdl8M1Apc
