Instructions

  1. Blend tofu, water, and honey in blender until smooth.
  2. Place mixture in large bowl with applesauce.
  3. Stir in the remaining ingredients and stir briskly.
  4. It will be stiff compared to average corn bread, more like dropped biscuits.
  5. Spread into an 8×8 pan or scoop into sprayed muffin tins.
  6. Bake at 375 degrees for 20 to 30 minutes.

    Are these muffin dry?

    I love this recipe.  Add your favorite topping to this muffin such as some homemade jam made with honey and lemon or top it with a little bit of your favorite nut butter.
