Instructions

  1. Sort beans on a dry dish towel, removing shriveled or discolored beans, as well as any foreign matter (rocks, etc.).
  2. Wash beans in colander and place in crockpot.
  3. Cook on low overnight or on high for 5 hours.
  4. Add salt and other seasonings after beans are cooked

    Why add seasoning after cooking?

    I’ve read that one shouldn’t cook kidney beans in a crockpot because they need to be cooked at boiling for a time to neutralize the amounts of lectin in them.  Even 4 or 5 uncooked beans can make someone very ill.
