A great rice dish which will make an interesting complement to your main dish. You could also turn this recipe into a tasty main dish by adding some faux-meat, such as our Veggie Cutlets.
- Prepare the brown rice according to the instructions.
Place the diced onion in a large nonstick skillet over medium-high heat. Add 1⁄4 c. water and salt. Simmer 5 minutes.
- Add the remaining ingredients. Toss together and heat to serving temperature.
Variation: Mexican Rice
Replace peas and curry powder with black beans, corn, and Homemade Taco Seasoning.
Ready in about: 20 minutes
Serves: 6-8 as a side, 4-6 as a main course
