Easy Lasagna

Instructions

  1. Spray a 9 × 13” casserole dish and layer as follows: a thin layer of spaghetti sauce, 3 uncooked pasta strips, half of the zucchini, spinach, onion and mushrooms lightly salted, half of the crumbled tofu, and about half of the remaining spaghetti sauce.
  2. Repeat layers beginning with noodles, ending with the rest of the sauce.
  3. Top with cheese sauce as desired. Bake covered 325° F for 90 minutes to 2 hours.

Serves 12

NOTE: After assembling, you may refrigerate overnight and bake the next day for 1 1/2 hours.

    With all the bad research on soy, I am surprised to still find it in your recipes.  Is there a good substitution?
