- Spray a 9 × 13” casserole dish and layer as follows: a thin layer of spaghetti sauce, 3 uncooked pasta strips, half of the zucchini, spinach, onion and mushrooms lightly salted, half of the crumbled tofu, and about half of the remaining spaghetti sauce.
- Repeat layers beginning with noodles, ending with the rest of the sauce.
- Top with cheese sauce as desired. Bake covered 325° F for 90 minutes to 2 hours.
NOTE: After assembling, you may refrigerate overnight and bake the next day for 1 1/2 hours.
