Instructions

  1. Mix the dry ingredients together.
  2. Mix wet ingredients together separately
  3. Mix wet and dry ingredients together and stir briefly.
  4. If batter seems too dry or thick add some soymilk or apple juice mixing as little as possible.
  5. Spray muffin pans and fill with batter.
  6. Bake at 325 F for 35-45 min or until golden and toothpick comes out clean.

Yields: 9-12 muffins

NOTE: Canned fruit should be drained well.

    I don’t have Ener-G Baking Powder—so how much would i use of “regular” baking powder in this recipe? Thanks.

    Thanks for your reply! Another question-
    Can I use lite coconut milk instead of regular? Will it affect the favor?
    If so, how much water would I add to a can of regular coconut milk to make it “lite?”

    Light coconut milk should not adversely affect the flavor. However, it might affect the texture somewhat. This is the fat in the recipe which contributes to what is called the “crumb” or tenderness of a muffin.
