- Mix the dry ingredients together.
- Mix wet ingredients together separately
- Mix wet and dry ingredients together and stir briefly.
- If batter seems too dry or thick add some soymilk or apple juice mixing as little as possible.
- Spray muffin pans and fill with batter.
- Bake at 325 F for 35-45 min or until golden and toothpick comes out clean.
Yields: 9-12 muffins
NOTE: Canned fruit should be drained well.
