Lemon Rice

Instructions

  1. Prepare rice in a cooker and set aside.
  2. Heat oil or water in pan.
  3. Add mustard seeds and when they start to split, add chilies.
  4. After 1 minute, add lentils, chick peas, peanuts, and turmeric.
  5. After 1 minute, or when this mixture becomes brown in color,
  6. Add prepared rice to the pan.
  7. Mix well and add lemon juice and coriander leaves.
  8. Add salt to taste and mix well.

This is very good with soy yogurt.

    Which one of the ingrdients is the curry leaves?  2 tbsp. chopped leaves, or pinch of crushed leaves?

    Oh so sorry . Yes it is coriander leaves . There is no curry in the recipe. Thanks and God bless ! Cheryl
