For whatever reason, it took me twenty-three years to try this fresh-tasting dessert--a dessert I've always wanted to order at Thai restaurants but always felt too full for by the time I finished my entree. That said, this is now my favorite dessert, ever. The following recipe is a much healthier version of one that usually includes less nutritious white rice and copious amounts of refined sugar.
- Combine brown rice, water, and salt in a saucepan and bring to a boil. Cover and lower heat to low and simmer for 45 minutes.
Take it off the heat and pour in the maple or brown rice syrup and coconut milk. Fluff the rice, then cover and let sit for about 20 minutes.
- Serve with mangoes (and a sprinkling of sesame seeds, if you want).
Ready in: about 1 hour 10 minutes
