An excellent substitute for Campbell’s Mushroom Soup.

  1. In a blender, process 1 cup water and cashews until very smooth and creamy. (Check to be sure there is no gritty feeling to the mixture.)
  2. Add Liquid Aminos, cornstarch, remainder of the water and mushroom juice and blend well.
  3. Add drained mushrooms and pulse blender quickly one time to mince mushrooms.
  4. Pour gravy into a saucepan. Heat, stirring constantly until thick and bubbly.

    To make this recipe freezable, replace the cornstarch with tapioca starch. You can then freeze portions ready for use in any recipe that calls for cream of mushroom soup.

    The tapioca starch adds a stretchy consistency that mimics the stretchiness associated with cheese. After freezing, the texture is restored upon heating.

    If you have Vitamixer, modify the instructions as follows:
    1.  In a blender, process 1 cup water and cashews until very smooth and creamy. (Check to be sure there is no gritty feeling to the mixture.)
    2.  Add mushrooms with juice and pulse blender quickly one time to mince mushrooms.
    3.  Pour into a saucepan. Add Liquid Aminos and cornstarch,
    4.  Pour remainder of the water into blender jar. Blend briefly to rinse blades and sides of blender jar. Pour into saucepan. Whisk with french whisk or gravy whisk to blend all ingredients.
    5.  Heat, stirring constantly until thick and bubbly.

    It’s hard to get all the gravy scraped out of the Vitamixer, expecially when doing small batches like this one. I’ve found that using part of the water to rinse the blender results in less loss of ingredients.

    When I click on print icon, it prints Bavarian potatoes instead of the gravy.
