Adapted from a popular restaurant, this is a nice variation to the usual burger-based tacos.
- In a food processor place all the nuts. Grind the nuts until the pieces are very fine. Remove to a bowl.
- Add the carrots, onion, garlic, celery, and parsley to processor and mince the vegetables well.
- Add dry seasonings (also rice if using it,) and nuts back to processor. Process until well mixed.
- Heat and slightly brown the filling in non-stick skillet.
Makes 8 tacos
NOTE: If using this to make a burger patty, add a tablespoon of ground flax seeds to nut mixture to help serve as a binder.
