Instructions

  1. Mix dry ingredients together.
  2. Add soy milk and oil.
  3. Pour ¼ c. batter for each pancake onto hot, lightly oiled griddle.

    1. I assume the honey should be mixed with the soy milk and oil first.
    2. Should this recipe sit for a bit before pouring, to thicken?... or was it intended to be blended?
    3. It came out more like thin crepes for me and worked well after blending.
    4.  Then I added a bit more flour and it worked for pancakes

    i would make my version, modified from Country Life cookbook-pancakes So it is 2 C. quick oats(reg. or GF)
                  1 C. of one kind of flour of choice- organic barley, or dk rye, or buckwheat flour; or-1 C. brown rice flour- GF.
                  1 C. organic ww graham flour; or 1 C. garbanzo bean flour-GF.
                    dash of sea salt, whisk dry together.
                    add 1 tblsp. maple syrup, and one 14 oz. can full fat coconut milk, fill can w/water. mix wet together. Add to dry mix. add another can of water to blend til dry and wet combine. Scoop out 1-2 cups of batter into blender, and blend til smooth. pour this pancake batter into a pitcher w/ a ladle. Finish blending the mixture 1-2 cups at a time til batter is all blended up and in pitcher. preheat a lightly oiled non stick pan. Wait til pan is hot before ladle batter on. if mix thickens, may add 1 tablespoon at a time of water w/ ladle to thin out. careful not to add too much water. just like any pancakes, wait to see bubbles form, and flip w/ spatula. w/ corner of spatula, poke a steam hole in middle of pancake. turn back once more to make sure cooked through. Transfer to a baking sheet to cool, if storing/eating later; otherwise keep in a warm   oven, enjoy!
