Old Country Style Muesli

Instructions

  1. Stir together rolled oats, water, dates, vanilla, salt, maple extract and lemon juice.
  2. Cover and refrigerate overnight, if time permits.
  3. Just before serving stir in nuts, apples and banana.

Yields 5 one-cup servings.

    i made a version of this when i cooked @ a child care center.i dumped a lot of thick cut rolled oats in a large mixing bowl. instead of water, or milk as in the recipe i followed- i put 100% apple juice, and a 32 oz. container of plain low-fat yogurt. mix all together. Cover, and sit in fridge for 1-1 1/2 hours to soften oats and set. Take out, and just before serve, chop up fresh apple/strawberries/grapes/blueberries. And i put a little Kashi almond granola cereal in a small bowl on the side, to sprinkle on top. i called it “crunchies”... when the teachers liked the very berry granola- they requested extra crunchies on top!
