Instructions

  1. Wash spinach leaves and steam until tender.
  2. In a food processor, blend to a smooth paste.
  3. Cut the tofu into medium cubes.
  4. Sauté the tofu in 1 Tbsp. oil until golden.
  5. Pulse the garlic, ginger, and green chilies to a fine paste.
  6. Sauté the chopped onion in 1 Tbsp. oil until tender.
  7. Add the masala paste and cook for 2-3 minutes.
  8. Add the tomato and cook until it becomes soft.
  9. Add the spinach paste, salt, and turmeric powder and cook for 4 minutes.
  10. Add the sautéed tofu pieces, cook for a few minutes and remove from the heat.

    Love, love, love this recipe.  I made this and put it over a jasmine brown rice last night for dinner.  My husband liked it so much he ate his and what I couldn’t eat of mine because it was so filling.  The only thing is that the instructions called for masala paste, but the ingredient list didn’t mention it.  I think the ingredient “small amount of tumeric” was maybe suppose to say “small amount of masala paste”?  Either way, I used garam masala power and it was delish.  Thanks for this keeper :)

    Oh was this a delicious meal.  I followed Rebecca’s advice and added ½ tsp of Garam Masala power.  Yum!  Thanks so much.  She’s right, this is a keeper.  :)

    To Rebecca, just to let you know that Masala paste has been Identified in Step 5 of Instructions, and added in Step 7 to the Sauteed Onion’s. This does sound like a recipe that I would enjoy making as well.
