- Combine the bread crumbs and coconut and set aside.
- Blend peaches, ripe bananas, pineapple juice, vanilla, and almond extract.
- Layer in a 9×13 inch baking pan as follows:
– Peach sauce – Crumb mixture – Banana slices – Raisins
- Continue layering and end with a layer of crumbs.
- Bake at 350 degrees F for 30 minutes or until golden brown.
Hint: This will not set up like a regular cake. You will need to dish it out with a serving spoon.
