It's sad but true: brussels sprouts are an adorable, but not well-loved vegetable. This recipe may change your mind. The roasting method browns and crisps up the edges and takes away the objectionable bitter flavor. Combine that with slices of sweet apple, a drizzle of maple syrup, and you've got yourself a lifelong brussels sprouts fan.
- Preheat oven to 400 degrees
Toss brussels sprouts and apple slices with olive oil, salt, and pepper on a rimmed baking sheet. Stirring halfway through, roast for 25-30 minutes, or until brussels sprouts are tender and browned on the edges.
- Transfer brussels sprouts and apples to a large bowl and stir in the cranberries, walnuts, and maple syrup.
