Roasted Red Pepper Hummus

Instructions

  1. Drain liquid from garbanzos, reserving for later.
  2. In a food processor place garbanzos, lemon juice, tahini, garlic, red pepper and onion powder.
  3. Blend until smooth and creamy, adding only enough liquid as necessary for desired texture.
  4. Add parsley last and process until chopped. Yield: 2 cups.

    Can I use basil instead of parsley?

    Basil will add another flavor dimension that some folks would like very much. Try half the hummus with parsley and the other half with basil and compare them for personal preference.
