Roasted Tomatillo Chile Salsa

Instructions

  1. Preheat oven to 400°. On a baking tray, roast tomatillos, onion, garlic and the whole chile for 15 minutes. Remove from oven.
  2. Place the chile in a plastic bag to sweat and cool for few minutes.
  3. When cool enough to handle, remove the skin, cut in half, remove the seeds and stem and add to a food processor.
  4. Meanwhile transfer the other roasted vegetables and any juices to processor.
  5. Add cumin, salt, cilantro and lime juice and pulse until well-combined but still chunky.

Serves 12
