Rotis (Indian Flat Bread)

Instructions

  1. Divide into equal portions, making balls about 1 inch.
  2. Apply extra flour to each ball and roll into thin diskettes about 5 inches round.
  3. Cook on griddle for ½ minute and flip over. If you have a gas stove, put on open flame and turn a couple of times until it puffs up. If you have an electric stove, keep rotis in your pan and press down on it with a crumpled up paper towel and it will puff up. It is done at this point.

    I dont understand - are the two fs mixed together with the salt and then water added? If so, what does step #2 mean “add wheat flour…”?

    Diana, it sounded odd to me too, but I think using the whole wheat flour instead of the other flour to keep it from being sticky in your hands or in pan is what they mean.

    I think the instruction is scanty.  Are you supposing we have processed the flour together in a misxer, then divide.  I don’t think a 1 inch ball will flatten out to a 5 inch dm .  And how do we add the wheat?

    Sorry for the error in the recipe . It should only be 1 cup whole wheat flour. No unbleached white. The rest of the recipe is correct. You make into appx. 1 inch balls and then roll out into little flat tortilla like pancakes.
