Scottish Oat Cakes

These oat cakes are delicious and hearty, particularly when there's a warm fruit compote sitting on top.

Instructions

  1. Place flour and nuts in a food processor and whiz for 1 minute, or until nuts are as fine as the flour but not getting buttery or sticking to the sides.
  2. Pour mixture in a mixing bowl and add oats and salt.

  3. Stir in warmed honey until a ball of dough forms, adding a little water if needed.  The mixture should stick together, but not be so wet that it sticks to your hands.
  4. Divide into about 12 walnut-sized balls and place on two nonstick cookie sheets.

  5. Roll flat with a rolling pin. 
  6. Bake 8 minutes at 350°F, then turn over and bake an additional 8 minutes.  Watch carefully--they burn easily!

  7. Serve with a Fresh Fruit Sauce, or add milk if desired.

Ready in: about 20 minutes.

Makes: 1 dozen cakes
