- Fill a pot with enough fresh water to cover garbanzos by at least 1 inch.
Bring the water to boil.
- Add the garbanzos to water and simmer over medium heat for 5 minutes.
Add 1/2 cup of the warm water from the pan and garbanzos to a blender.
- Combine remaining ingredients and whirl until smooth. As necessary, thin out the mixture with more water.
Stir in a dash of cumin and a dash of chili powder.
- Drizzle with 1 tablespoon olive oil before serving.
Tip: You can garnish the hummus with a sprig of parsley or pine nuts. Serve on a shallow platter with pita chips or pita bread. Another great way to eat hummus is to spread it on a tortilla and top with kalamata olives, chopped tomatoes, roasted bell peppers and lettuce.
