- Process water and soybeans in a blender until smooth.
- Strain liquid out through cheesecloth. If desired, save pulp to use in loaves or patties.
- Stir in vanilla and salt. Keep refrigerated.
Yields: 2 2/3 cup, strained, or 3 ¾ cup unstrained.
NOTE: Soak 2 cups raw soy beans in 2 quarts water overnight. After soaking, bring beans and water to a full rolling boil in a large kettle. Lower heat and simmer 5 minutes longer. Pour off foamy liquid and add cold water to stop boiling/cooking process. When cool, drain off water. Yields 4 cups prepared soy beans. Freeze beans in 1 cup quantities, ready for making up fresh milk. Before using, rinse with hot water to thaw quickly.
