Spinach Stuffed Manicotti

Instructions

Just the dish to prepare when you’re having company for dinner. The tofu replaces ricotti cheese and they’ll never know the difference.

  1. Drain tofu well. Mash until the texture of cottage cheese.
  2. Simmer spinach and garlic in a small amount of water. Do not overcook.
  3. Chop spinach until fine and drain. Combine with tofu and mix well.
  4. Add seasonings and adjust to taste. Stuff the manicotti with filling and place in a baking dish.
  5. Pour spaghetti sauce over the top and bake at 350° F until heated through.

Variations: Use lasagna, pasta shells or crepes instead of manicotti.

    This stuffed manicotti looks delicious, and I will be making this soon. I just hope that my friends who write superior papers reviews will come to my party where I make this manicotti. I want to learn their opinion on this.

    For the next fundraiser that they are organizing for project-teach-haiti.org, I am sure they will have this on the menu. The reason is because it is very easy to cook and it is heavy.
