Instructions

  1. Bring medium pot of water to a boil. Add noodles, remove from heat, and let stand 1 minute.
  2. Drain noodles, toss with sesame oil, and set aside.
  3. Heat oven to 400º. Place liquid aminos in a flat dish.
  4. Dip tofu strips in liquid aminos and place on a non-stick baking sheet.
  5. Bake for about 20 minutes, turning around strips every now and then, until firm and lightly browned.
  6. Fill shallow bowl with warm water. Soak one rice paper wrapper for about 30 seconds, or until pliable.
  7. Place wrapper on clean work surface. Place some noodles, tofu, avocado, bean sprouts, carrots, basil, mint, and cilantro on bottom third of wrapper.
  8. Roll up wrapper while pressing down lightly, and fold in sides to enclose filling. Repeat with remaining wrappers and filling.
  9. Cut spring rolls diagonally in halves or thirds and arrange on serving platter.
  10. Sprinkle with sauce and peanuts before serving or serve sauce separately for dipping.

    can the peanut sauce be omitted or another sauce be used because of peanut allergies.

    You can omit the peanut butter altogether, and your sauce will just be more liquid than creamy.  Peanuts are used in many Asian dishes to give it the right flavor.  Substituting another nut would change the flavor too much, but using the other ingredients would still give you a dipping sauce.

    I always thought that the rice paper needed to be cooked.. any thoughts?

    You may be thinking of rolls made of wheat flour that are not precooked? Those indeed, need to be cooked, and are usually moist upon purchase. The rice paper wraps used in this recipe are precooked wraps. They are steamed and then dried. That is why all you need to do is dip them in warm water briefly to rehydrate them for consumption.
