Tofu-Basil Lasagna

Tofu-Basil Lasagna

Full of great flavor and substance (not to mention health), this pan of lasagna will put the meat-heavy lasagnas to shame.

Instructions

  1. Make the tofu-basil ricotta: In a large bowl, mash the tofu until it reaches creamy, ricotta-like consistency.  Combine the rest of the ingredients and mix well.
  2. Assemble the lasagna:

    1. Layer spaghetti sauce on the bottom of a 9x13 pan

    2. Layer the uncooked (or half-cooked) lasagna noodles

    3. Layer ½ of the tofu filling, then pat down.

    4. Layer another 1 ¼ cup spaghetti sauce

    5. Layer zucchini, mushrooms, spinach, and basil

    6. Layer more lasagna noodles

    7. Layer the rest of the tofu filling, then pat down

    8. Layer another 1 ¼ cup spaghetti sauce

    9. Layer last of the lasagna noodles

    10. Layer another cup of spaghetti sauce

    11. Sprinkle with vegan cheese (optional)

  3. Bake covered with foil until bubbly at 375F—about 50 minutes.  Uncover and bake for an additional 10 minutes.  Let stand before cutting, and sprinkle with freshly chopped basil just before serving.

Makes: one 9x13 lasagna
