Tofu Lasagna with Spinach

Instructions

Filling:

  1. Dice onion into water and let simmer for about 5 minutes.
  2. Remove excess water from the tofu, either by putting it into a cheese cloth and wringing it, or by squeezing it in your hands.
  3. With your hands, break the tofu into small cottage cheese-like pieces and place in a bowl.
  4. Mix dry ingredients into the tofu.
  5. Add onion and chopped spinach to the tofu and set aside.

To assemble the lasagna:

  1. Use a 9×13 casserole dish lightly sprayed with non-stick spray.
  2. Ladle in 1 ½ cups of Simple Tomato Sauce and spread over bottom of dish.
  3. Place uncooked lasagna noodles length-wise in dish and spread about 3 cups of the tofu filling on top of them.
  4. Spread tomato sauce over the tofu mixture.
  5. Pour some of the Tahini "Cheese" over this and add another layer of the noodles.
  6. Keep repeating until you have three layers.
  7. Top it off with sprinkling Soy Parmesan Cheese on top.
  8. Cover with foil and bake for 1 hour.
  9. Remove foil and let the steam evaporate for at least 15 min. This will be easier to cut if you do.

    Hello there, The photo and the instructions don’t seem to match.There may be an error.
    Step 6 states to:  Mix all these ingredients together thoroughly and set aside.
    Step 7 states to: Blend all ingredients until smooth.
    If you were to blend all ingredients until smooth, the spinach and tofu would not be detectable and everything would be green. The photo shows chunks of spinach and tofu. Also the noodles, pasta sauce, tahini cheese and the soy parmesan cheese should all be listed under the ingredient section.

    How many uncooked lasagna noodles are needed? Or how many packages of noodles?

    Are you aware that one of the listed ingredients in the Soy Parmesan Cheese (Soy Kaas Soy Cheese) is sodium casein (a milk protein).
