- Place all but last 3 ingredients in a blender and blend until smooth.
- Place blended mixture in a large mixing bowl and stir in the grated vegetables and onion.
- Place in a 9-inch un-baked pie shell and bake at 350 degrees F for 50 minutes.
*This is also very tasty using a 10 oz. pkg. of frozen, chopped and drained spinach in place of the carrot and zucchini.
