
These burgers are an excellent way to use up your summer zucchini. They are hearty, healthy, and have a wonderful texture. As a bonus, you can easily make these burgers gluten-free by using gluten-free flour and oats.

- Mix zucchini with Bill's seasoning and salt. Set this aside.
- Process the walnuts until chopped finely.
- Add the rest of the dry ingredients and blend them together.
- Set the mixture aside.
- Combine the carrots, onion, and garlic and blend them.
- Add the dry ingredients to the processor and mix well.
- Combine the zucchini mixture with everything else in a bowl and hand mix.
- Form your mixture into patties and cook until golden brown. (You can do this in the oven, baking them for 12 minutes on each side at 375 degrees, or you could brown them in a griddle.)
Makes: 8 patties

I liked the idea of zucchini patties and doubled the recipe. They are so salty—even ineatable. Not sure what to do with them but throw them away. I will try mixing them with mashed unsalted potatoes tomorrow. Hope it works!

On thinking back I didn’t have Bill’s Seasoning so I used MacKay’s Chicken-like Seasoning which is quite salty. I am guessing that is where I went wrong.

Sorry about the heavy salt! The original recipe called for 1 1/2 tablespoons Bill’s Best seasoning, and 1/2 teaspoon salt. Perhaps this recipe is a typo error?
