A summer blackberry cobbler is good for breakfast, lunch or supper.
- Wash fruit and place in casserole dish.
- If using dates, whiz in blender with pineapple juice until smooth. If using date sugar or honey, stir with pineapple juice to mix.
- Dissolve cornstarch in water. Mix the fruit liquid and cornstarch together and pour over berries.
- Cover with favorite topping, such as granola or a pie crust and bake 350° for about 45 minutes.
